Recipe ingredients:
2 cups brown lentils
20 small tomatoes
1 cup chopped parsley
2 chopped green onions with green leaves
1 piece of chopped lettuce
1/4 cup lemon juice
1/4 cup olive oil
1 teaspoon salt
2 tsp cumin
1/2 teaspoon black pepper
200 grams of Akkawi cheese
2 teaspoons thyme with sesame
How to prepare:
1. In a saucepan, place the lentils and immerse them in water, cover the pot and leave it on a medium heat until it becomes tender. Drain the lentils from the boiling water and put them in the fridge until they become cold. You can prepare it several hours in advance or a day in advance.
2. Put lentils in a plate, add cumin, salt, black pepper, lemon juice, parsley, and green onions.
3. Add olive oil, stir the ingredients together to blend the flavors.
4. In a plate, put chopped lettuce, top with lentils.
5. Cut the cheese into rectangular pieces or cubes, and spread them over the lentils.
6. Chop the tomatoes as desired, then distribute them over the salad.
7. Sprinkle thyme over the salad, then garnish with some parsley and serve.
