Sweet cheese with pistachio and cream from the Syrian kitchen

Ingredients:

1/4 cup sugar

3/4 cup fine semolina

3/4 cup water

150g of mozzarella cheese

- A little rose water.

- Syrup (sherbet), the ingredients of which are a cup of water, two cups of sugar, a little blossom water and some drops of lemon, and when you see that it has begun to stick to the stirring spoon, you are ready.

- Cream.

Pistachios for garnish.


How to prepare:

- Put semolina in a saucepan, then add sugar, cheese, water and rose water and put it on the stove.

Stir the ingredients together until the cheese melts and until it becomes a chewy dough and forms like a ball.

Sprinkle the syrup on a wooden surface.

The dough is poured while hot on the syrup, then it is taken from the syrup and placed on it, then spread from above and below by using the syrup to facilitate the individual process.

- The sides are leveled with a knife.

Leave it to cool before adding the cream.

- Take an amount of cream and describe it on the dough, then turn over the end of the dough and roll like a roll, then cut and separate from the rest of the dough.

Roll the rest of the amount in the same way, then cut as desired.

- Put it in the refrigerator about 1/2 hour, then sprinkle it with a little bit of syrup and decorate with pistachios.
