Grilled vegetable salad
Often the appetizers are more important than the basic meals, especially for those who are keen to eat healthy foods, looking for different types of salads that fit with their diet so that it is the main dish of their meal
Ingredients:
1 large eggplant
1 zucchini
An avocado
4 tomatoes
1 green pepper
1 yellow pepper
1 red pepper
Head of garlic
1 teaspoon salt
2 small spoons of thyme
¼ teaspoon black pepper
5 tablespoons of olive oil
Preparation steps:
Wash the eggplant and zucchini well, and slice it, without peeling it.
Grill tomatoes, peppers, eggplant, zucchini, garlic and onions in the oven over a medium heat for 5 minutes.
Take the vegetables out of the oven, and cover with nylon paper until cool.
Peel the onion and garlic, and chop medium-sized chunks.
Chop the eggplant, zucchini, chop the tomato, and chop the avocado.
Add olive oil, salt, black pepper, and thyme and mix well. Add dressing to vegetables, stir well and serve with bread fried toast.
