American kitchen and easy to prepare

The salad plate is enough for 4 people

Ingredients:

4 boneless chicken fillet breasts

1 tablespoon avocado oil or olive oil

8 packed cups of mixed lettuce leaves

1 cup fresh or frozen organic corn kernels, cooked or thawed

1.5 cups red cherry tomatoes and a yellow, halved

1/3 cup chopped pecans

4 boiled eggs, peeled and chopped

One ripe avocado, diced

Sweet Onion Sauce:

2 fresh garlic cloves, pressed

1 small onion, chopped

4 tablespoons of pure olive oil divided

1/4 cup of apple cider vinegar

1/2 fresh squeezed lemon

Sea salt and freshly ground pepper

Method:

Heat a grill pan or outdoor grill over medium-high heat. Season the chicken with sea salt, pepper and a little oil, then add it to the grill. Cook for 5 minutes per side, or until fully cooked and no longer pink on the inside. Set aside on a cutting board, cover and leave for 2 minutes, then cut thin slices.

Heat 1 tablespoon of oil in a frying pan over medium heat. Saute garlic and onions for 6 minutes, or until soft and golden brown. Put the garlic and onions in a small blender with the remaining extra virgin olive oil, apple cider vinegar and lemon juice. Until puree until smooth.

Season to your taste with sea salt and pepper, then cool the seasoning until ready to serve.

In a large salad bowl, add lettuce, then cooked chicken, tomatoes, corn, eggs, walnuts, and diced avocado as shown in the picture.

-Once you are ready to serve, sprinkle the sauce over the top, and mix gently.
