Ingredients:
8 slices of French toast, cut in half diagonally
1-1 / 2 cups of unsweetened almond milk, coconut milk, or any regular milk of your choice
8 large eggs
1/4 cup pure maple syrup or raw honey
1 teaspoon ground cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon ground cloves
1 tablespoon of pure vanilla extract
1/4 teaspoon salt
1/2 cup chopped raw pecans or walnuts
2 medium bananas, sliced
1/2 tablespoon melted butter, to grease the casserole
Method:
Spread an 8 x 10-inch baking dish with ghee or coconut oil.
In a large bowl, whisk: milk, eggs, maple syrup / honey, cinnamon, nutmeg, cloves, vanilla, and salt.
Spread the bread evenly and gently into a greased baking dish.
Pour the milk mixture, eggs, vanilla, nutmeg, and cinnamon with well mixed salt all over the bread and shake slightly to make sure all the bread is soaked.
Cover the dish tightly with plastic wrap and place in the fridge overnight.
The next morning, add banana and walnut slices when you are ready to bake. Preheat the oven to 350 degrees Fahrenheit.
Cover with tin foil and bake for 15-20 minutes. Uncover and continue baking for another 10 minutes, or until the surface is golden brown. Make sure that no liquid spills from the toast when you press it lightly.
Serve hot with a little raw honey or pure maple syrup.
