Brownie cake with chocolate and apple juice

Ingredients:

1/3 cup + 1 tablespoon of natural peanuts or almond butter

1/3 cup pure B maple syrup, or raw honey

1/2 cup of raw, unsweetened apple juice

1 egg, room temperature

1 teaspoon pure vanilla

1/2 cup unsweetened cocoa powder

1/2 cup old-fashioned rolled oats

1 teaspoon baking soda

1/8 teaspoon sea salt

1.5 cups zucchini, finely grated (skin remaining), about 2 small zucchini

1/2 cup dark chocolate chips You can use any high percentage of cocoa flakes, this will add a little more sugar ... depending on what you use.


instructions:

Preheat oven to 350 degrees Fahrenheit.


Spray the 8x8 cake pan with nonstick spray or wipe the pan with coconut oil.


Beat the oats in a blender or food processor until well milled. (Dry oats are measured before grinding ... always I get a lot of questions about this)


In a separate bowl, sift the dry ingredients or whisk together; Cocoa powder, ground oats, baking soda and sea salt; Until it blends well.


Using your blender, cream peanut butter, apple sauce, eggs, maple syrup and vanilla until smooth. Add the grated zucchini and mix until blended.


Add dry ingredients to wet, and blend until blended ... do not over mix.


Stir half of the chocolate chips.

Pour the mixture into the prepared baking tray and sprinkle the remaining potatoes over it.


Bake for 23-26 minutes in a preheated oven.

Cool before chopping.
