Fried rice with vegetables from Japanese cuisine

 Fried rice is one of the easy, healthy and simple recipes to make or you can eat it on weekdays as well, and this recipe is easy to store too! Hope you enjoy this! Meal is enough for 2-3 persons.


Recipe ingredients:


3 cups cooked, chilled or short-grain Japanese rice

2 tablespoons avocado oil

1 onion, diced

1 carrot, finely chopped

2 cloves of minced garlic

1/2 cup corn kernels

1/2 cup green peas

1/2 cup shiitake mushrooms, diced (feel free to use other types of mushrooms!)

1/2 to 1 tablespoon soy sauce

1 teaspoon salt

1/2 teaspoon black pepper

1/2 tablespoon sesame oil

Sesame seeds and chopped green onions to garnish


Notes:

Vegetables and mushrooms are entirely up to you, whichever vegetable you like! Feel free to use what you have. I used frozen corn and peas.


1. Divide the cooked rice into a bowl.

2. Heat a deep frying pan. Add 2 tablespoons of oil. Once it warms up, add the onion and garlic. Fry until aroma. Add carrots. Fry for 2-3 minutes.

3. Add the rest of the corn, peas and mushrooms. Season with 1 teaspoon salt. This will be a little salty but once you mix the rice, it will fit perfectly.

4. Add the cooked rice. Season with soy sauce and black pepper. Mix well. Cook over high heat, mixing frequently to avoid bottom sticking.

5. Finish with a little sesame oil. Transfer the rice to a bowl and place it with a spoon. Place a place and turn it over to make a rice circular shape. Garnish with some sesame seeds and green onions if desired. Enjoy it hot!
