Recipe ingredients:
2 cups Rigatoni (a kind of Italian pasta)
2 cups butternut squash, peeled and diced
1 medium carrot, peeled and chopped
1/4 cup nutritional yeast
1 cup of vegetable milk of your choice
1/2 teaspoon salt (or to taste)
1 tablespoon apple cider vinegar
1 teaspoon paprika
1 teaspoon cumin
1 tablespoon tomato paste
2 teaspoons olive oil
1 cup chopped mushrooms
1 tablespoon of tamari
Method:
Cook the noodles for 1-2 minutes according to package instructions. Meanwhile, cook the squash and carrots until fully softened (about 15 minutes). Strain and rinse the squash and carrots when they're ready. Transfer it to a blender or food processor along with nutritional yeast, vegetable milk, salt, apple cider vinegar, paprika, cumin, and tomato paste. Even a smooth blend. Then heat the olive oil in a large non-stick frying pan. Add mushrooms and tamari and cook for 4-5 minutes until mushrooms are tender. Add sauce and pasta to the skillet. Stir for two minutes, then serve with your choice of garnish.
