Today we offer Italian food lovers some of the easiest vegetarian pasta dishes for those who also love vegetarian food, and this dish takes only 15 minutes to make and is incredibly delicious! Get the recipe with the easy way to prepare!


Recipe ingredients:

2 cups Rigatoni (a kind of Italian pasta)

2 cups butternut squash, peeled and diced

1 medium carrot, peeled and chopped

1/4 cup nutritional yeast

1 cup of vegetable milk of your choice

1/2 teaspoon salt (or to taste)

1 tablespoon apple cider vinegar

1 teaspoon paprika

1 teaspoon cumin

1 tablespoon tomato paste

2 teaspoons olive oil

1 cup chopped mushrooms

1 tablespoon of tamari

 

Method:


Cook the noodles for 1-2 minutes according to package instructions. Meanwhile, cook the squash and carrots until fully softened (about 15 minutes). Strain and rinse the squash and carrots when they're ready. Transfer it to a blender or food processor along with nutritional yeast, vegetable milk, salt, apple cider vinegar, paprika, cumin, and tomato paste. Even a smooth blend. Then heat the olive oil in a large non-stick frying pan. Add mushrooms and tamari and cook for 4-5 minutes until mushrooms are tender. Add sauce and pasta to the skillet. Stir for two minutes, then serve with your choice of garnish.
