Ingredients:


Eggplant: 2 pieces (large)

Tomato: 1 piece (large, chopped)

Garlic: 3 cloves (crushed)

Mint: 2 leaves (finely chopped)

Salt: 1 teaspoon

Pepper: half a teaspoon

Lemon juice: 1 1/2 tablespoon

Pomegranate molasses: 1 1/2 teaspoons

Green pepper: 1 piece, chopped into small pieces

Parsley: 2 tablespoons (finely chopped)

Olive oil: to taste


How to prepare:


Roast the eggplant over the fire, then peel it and extract the pulp.


Drain the pulp well in a colander, then mash it in a bowl.


Add tomatoes, mint, garlic, pepper and parsley.


Mix the ingredients well and mash them using a fork.


Season with salt, pepper, lemon juice and pomegranate molasses and mix again.


Serve Baba Ghanoush cool on your trip.
