Brioche stuffed with apricot jam



Recipe ingredients:


The dough:


3/4 cup 3 flour


1/4 cup fine-grained sugar


1/8 teaspoon salt


1 tablespoon soft instant yeast


1 cup melted butter


3 eggs


1 teaspoon liquid vanilla


1/4 cup warm water


Fillers:


1/2 cup chopped apricots


3 tablespoons fine-grained sugar


To decorate:


 Apricot jam / sugar



How to prepare:


1. Get small brioche molds


2. In a mixer bowl, put 3 cups of flour, sugar, salt and yeast. Install the dough hook. Run on a slow speed until the ingredients are mixed. Add the butter, run the mixer on medium speed until the butter disappears. Add the eggs gradually. Add the vanilla and water. Knead until a cohesive dough is formed. Add the rest of the flour if the dough is soft. Knead for 5 minutes


3. Get a tray with a short edge. Cut the dough into 20 pieces. Take a piece of dough. Shape it into a disk. Put 2 teaspoons of the filling. Close the disk on the filling. Shape it into a smooth ball. Place the molds in the closed side down. Place the molds on the tray. Cover the dough with a piece of nylon and let it sit for an hour, until it doubles in size again.


4. Set the grill rack in the center of the oven Preheat the oven to a temperature of 180 ° C.


5. Bake the brioche for 15-20 minutes or until golden brown.


6. Take the brioche out of the oven using a small brush. Grease the brioche with jam and sprinkle the sugar. Cover the brioche with a clean towel and leave for 5 minutes. Then serve.


7. Filling: In a deep dish, put the apricots and sugar using a teaspoon of my heart, until the ingredients are mixed.
