Ingredients:
2 portions soba noodles
1 medium onion, chopped finely
1 large carrot, peeled and chopped
2 tbsp tamari
1 tbsp maple syrup
1 tsp hot sauce (optional)
2 tbsp rice vinegar
1/2 cup water
2 tsp cornstarch
Method:
Cook the noodles according to packaging instructions. Meanwhile, add the onion and the
carrot to a non-stick frying pan. Sauté for 2-3 minutes until softened. Meanwhile, make the
sauce by stirring together the tamari, maple syrup, hot sauce, rice vinegar, water and
cornstarch. Once the noodles are done, drain and rinse them and transfer to the frying pan
together with the sauce. Toss together until the noodles are coated evenly and the sauce had
thickened.
