Squid or calamari is a type of fish that adults and children like .. We often eat it fried in sandwiches or in casseroles with sauce .. But in this recipe we present a method for making squid stuffed with rice .. Make sure to buy fresh, provided that the pieces are small in the size of stuffed eggplant .
Ingredients:
1 kg small squid or calamari
2 cups rice
1 grated onion
3 tablespoons of oil
1 teaspoon salt and pepper
2 mastic cloves
2 cardamom cloves
1 liter of water
2 vegetable stock cube
The method of work:
1. Rub the squid thoroughly with a little flour, salt and vinegar. Wash it under running water and leave it aside to get rid of the excess water.
2. Wash the rice and drain it from the water .. Put it in a bowl and add onions, oil, salt and pepper to taste .. Mix them well.
3. Fill each piece of squid with a portion of rice, provided that the filling does not exceed 2/3 of a single piece .. Then tighten it with a toothpick.
4. In a pot on a medium heat, put a little oil, mastic soup and cardamom ... Add the water and stock cubes and leave it until it begins to boil.
5. Add the stuffed squid and simmer for 40 minutes or until you are sure to cook.
6. Remove the squid and leave it to cool down in a clean dish and get rid of the liquids before frying it ... Do not forget to get rid of the toothpick.
7. Heat plenty of oil and fry the squid until it gets a golden color.
8. Remove the squid and place it on kitchen paper to absorb the excess fat. Serve immediately
