This meal is enough for 4 persons, and the recipe is as follows:
Recipe ingredients:
2 medium English cucumbers, chopped
1 large yellow pepper, chopped
2 cups cherry tomatoes or grapes, halved
1 medium red onion, diced
1 can of chickpeas, drained and washed
½ 1 cup pitted kalamata olives, halved
Half a cup of crumbled feta cheese
Tzatziki sauce:
1/3 cup plain Greek yogurt
1 tablespoon of extra virgin olive oil
2 tablespoons of fresh lemon juice
1 tablespoon fresh lemon peel
1-2 fresh garlic cloves, minced or juiced
A small handful of chopped fresh dill
Sea salt and freshly ground black pepper to taste, about 1/4 teaspoon each
Method:
To prepare the sauce: Put all the ingredients in a jar and shake vigorously until it becomes an emulsifier. Or whisk it well in a small glass bowl.
Keep it inside the three until you use it.
In a large bowl, arrange all the ingredients for the salad. Pour the sauce, and gently mix until well combined.
Leave the flavors to mix for at least 10 minutes before eating.
It stays well in the refrigerator for about 24 hours.
