Ingredients:
Olive oil: 2 tbsp
Tomatoes: 3 pieces (large / chopped and peeled)
Eggs: 3 pieces
Spinach: 2 cups (coarsely chopped)
Onions: 1 piece (chopped)
Hot green pepper: a horn (finely chopped)
Parsley: 2 tablespoons (chopped / to garnish)
Salt: 1 teaspoon
Black pepper: half a teaspoon
How to prepare:
Heat the oil in a wide frying pan, add the onion and hot pepper, and stir for 5 minutes, until the onions are tender.
Add the tomatoes and salt, stir, reduce the heat, and leave the tomatoes for 10 minutes until they are stirred.
Add spinach and my heart for 5 minutes.
Add the eggs, keep the eyes in shape without mixing, cover the skillet, and leave it until cooked to your preferred degree.
Season with black pepper, spread parsley and serve hot, along with toasted bread.
