Ingredients:
Fine semolina: 2 cups
Flour: 2 cups
Yeast: 2 tsp
Baking powder: 4 tsp
Salt: 1 teaspoon
Warm Water: 2 cups (+ 4 cups or as needed for mixing)
Sugar: a tablespoon
Cream: as needed (ready / for the filling)
Pistachios: as desired (ground)
How to prepare:
In a small bowl, melt the yeast and sugar in two cups of warm water.
In a large bowl, put semolina, flour, yeast, baking powder, and salt, and mix.
Add the yeast mixture and the rest of the water and mix with a hand mixer until the ingredients are homogeneous and you get a soft dough.
Cover the bowl and let the dough rest for 30 minutes.
Heat a frying pan well.
Reduce the heat and pour a tablespoon and a half of the mixture into the skillet in a small circle shape.
Wait for bubbles to appear on the face and the paste is blonde in color from below.
Take the qatayef out of the pan and return the ball to finish all the mixture.
Always make sure to cover the prepared dough so that it does not dry out.
Close one end of the dough and fill the open end with cream.
Decorate with crushed pistachios and lemon blossom and serve with syrup or honey.
