Ingredients:
1 teaspoon olive oil
1/2 cup chopped fresh mushrooms
1/4 cup chopped green pepper
1/4 cup chopped sweet red pepper
2 eggs
1/4 teaspoon pepper
2 whole wheat tortillas, warm
1/4 cup low-fat shredded cheddar cheese
2 tablespoons of sauce
2 tablespoons fat-free sour cream
Method:
In a small non-stick skillet, heat the oil over medium-high heat. Add vegetables and cook and stir until soft. Move the pan away from the fire.
Add eggs and pepper to the same pan; Cook and stir over medium heat until it thickens and there are no liquid eggs left. Move the pan away from the fire.
Pour vegetable mixture and beaten eggs into the center of each tortilla; Top with cheese, sauce and sour cream. Fold the bottom and sides of the tortilla over the filling and roll.
