Here is a delicious and delicious dish for all lovers of healthy eating, and also suitable for people who follow a special diet. Avocado boats with eggs and salmon are integrated, easy to prepare and nutritious dishes, as it is useful to eat in lunch or dinner.





Ingredients:

 4 avocados, halved like a boat (8 halves), seeded.

 8 medium sized eggs.

 Half a cup of smoked salmon slices. Large red bell pepper, cut into cubes.

 Half a tablespoon of dried mint.

 1/2 cup shredded low-fat cheese. 

Salt and Pepper. 


 A large clove of garlic, finely mashed.

How to prepare:

Turn on the oven at medium temperature (180°C). 

 With a sharp spoon, make a hollow in each half of the avocado, and cut the flesh of the avocado into cubes, keeping the outer shell in the shape of a boat. 

 Prepare the filling as follows: 

In a glass bowl, mix the cubes of avocado, salt, pepper, garlic, cubes of colored pepper, slices of smoked salmon and dry mint.

 In an oven tray furnished with butter paper, stack the avocado boats, then cover the bottom of each boat with a spinach leaf, then crack an egg in each one, then a spoonful of the filling over the egg and then grated the low-fat cheese.

 Bake the tray in the oven (15-20 minutes) until the eggs are cooked and serve hot.
