Citrus Chicken Stir-Fry

Ingredients:
200g chicken breast, diced
1 medium orange, juiced and zested
1 tablespoon soy sauce
1 tablespoon honey
1 teaspoon sesame oil
1 bell pepper, sliced
1 small carrot, julienned
1 garlic clove, minced
1 teaspoon ginger, minced
Salt and pepper to taste
Cooked rice or noodles, to serve
Steps:
-In a bowl, mix the orange juice, zest, soy sauce, honey, sesame oil, garlic, and ginger to create the marinade.
-Add the diced chicken to the marinade and let it sit for 15 minutes.
-Heat a non-stick pan over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes.
-Add the bell pepper and carrot to the pan, stirring frequently, and cook for another 3-4 minutes until the vegetables are tender yet crisp.
-Season with salt and pepper to taste.
-Serve hot over cooked rice or noodles, drizzled with any remaining sauce from the pan.
