These energy bites are naturally sweet, full of flavor, and perfect for a quick, guilt-free treat!


Ingredients:

1 cup pitted Medjool dates (about 10-12 dates)

1/2 cup raw almonds

1/4 cup unsweetened shredded coconut

2 tablespoons chia seeds

2 tablespoons cocoa powder or unsweetened cocoa powder

1/4 cup rolled oats

1/2 teaspoon vanilla extract

1/4 teaspoon ground cinnamon

pinch of salt

1-2 tablespoons water (if needed, for binding)

Optional toppings:

1/4 cup mini dark chocolate chips (sugar-free, if desired)

2 tablespoons peanut butter or almond butter

Directions:

Prepare ingredients:


In a food processor, combine dates, almonds, shredded coconut, chia seeds, cocoa powder, rolled oats, vanilla extract, cinnamon, and salt.

Blend:


Pulse until mixture is finely chopped and begins to come together. If mixture is too dry to hold together, add water 1 tablespoon at a time until you reach a sticky consistency.

Form Energy Bites:


Scoop about 1 tablespoon of mixture and roll into small balls. Repeat until all mixture is used.

Refrigerate:


Refrigerate Energy Bites for at least 30 minutes to set.

Serve and Enjoy:


Store in an airtight container in the refrigerator for up to a week. Enjoy these as a snack, dessert, or pre-workout boost!
