This no-bake vanilla cream cake is a delicious, easy dessert that doesn’t require an oven! With a creamy filling and a buttery biscuit base, it’s perfect for any occasion. Here’s how to make it!


Ingredients

For the base:


200g Maria biscuits (or any sweet biscuit)

100g melted butter

For the filling:


500ml whipping cream

200g cream cheese, softened

100g icing sugar

2 tsp vanilla extract

- 10g unflavored gelatine powder

50ml water

For the topping (optional):


Whipped cream or chocolate ganache (for garnish)

Fresh fruit or grated chocolate (for garnish)

Instructions

Step 1: Prepare the base

Crush the biscuits: In a food processor or by hand, crush the Maria biscuits until fine crumbs form.

Mix with the butter: In a mixing bowl, combine the crushed biscuits with the melted butter. Mix until the crumbs are evenly coated.

Form the base: Press the cookie mixture firmly into the bottom of a springform pan or rectangular dish to form an even base. Chill in the refrigerator while you prepare the filling.

Step 2: Prepare the filling

Dissolve the gelatin: In a small bowl, sprinkle the gelatin powder over the water. Let it bloom for about 5 minutes, then gently heat until completely dissolved (you can do this in the microwave or on the stove).

Whipped cream: In a large mixing bowl, whip the cream until stiff peaks form.

Combine the ingredients: In another bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth. Gradually add the dissolved gelatin while mixing.

Add the whipped cream: Gently fold the whipped cream into the cream cheese mixture until fully combined, being careful not to deflate the whipped cream.

Step 3: Assemble the cake

Filling layer: Pour the cream filling over the cooled cookie base in the springform pan. Smooth the top with a spatula.

Chill: Cover and refrigerate cake for at least 4 hours, or until set (overnight is best).

Step 4: Add frosting and serve

Prepare topping: If desired, whip additional whipped cream or make chocolate ganache.

Remove from pan: Once cake is done, carefully remove sides of springform pan.

Decorate: Top with whipped cream or ganache and garnish with fresh fruit or chocolate chips, if desired.
