Ingredients:


300g (10oz) white chocolate, chopped into small pieces

1/4 cup almonds, whole or roughly chopped

1/4 cup pistachios, shelled and roughly chopped

1/4 cup pumpkin seeds

1/4 cup dried cranberries

1/4 cup dried apricots, roughly chopped (or dried mandarin/orange pieces if available)

(Feel free to adjust toppings based on your preferences!)


Instructions:


Prepare a baking sheet: Line a baking sheet with parchment paper or a silicone baking mat. This will make it easier to remove the bark once it has set.


Melt the white chocolate:


Use the double boiler method to melt the chocolate. Place a heat-safe bowl over a pan of simmering water (making sure the bowl does not touch the water) and add the chopped white chocolate. Stir constantly until melted and smooth.

Alternatively, you can melt the chocolate in the microwave. Place the chocolate in a microwave-safe bowl and heat in 20-30 second increments, stirring between each one, until completely melted and smooth.


Spread the chocolate: Pour the melted white chocolate onto the prepared baking sheet and spread it evenly with a spatula about 1/4 inch thick.


Add toppings: While the chocolate is still melting, sprinkle the almonds, pistachios, pumpkin seeds, dried cranberries, and dried apricots over the surface. Press them lightly with your fingers to ensure they adhere to the chocolate.


Set the bark: Allow the chocolate bark to cool and harden completely. You can speed this up by placing it in the refrigerator for about 20-30 minutes.


Break into pieces: Once the chocolate has set, break it into irregular pieces with your hands or cut it with a sharp knife.


Serve and enjoy: Your white chocolate bark is ready to enjoy! Store any leftovers in an airtight container in a cool, dry place or in the refrigerator for up to two weeks.


Tips:

For extra flavor, you can sprinkle a little sea salt over the bark before it sets.


Mix in other toppings like shredded coconut, freeze dried berries, or even a drizzle of dark chocolate for extra texture and flavor. Enjoy making this easy and elegant dessert.
