This Savory Cereal Bowl transforms regular cereal into a delightful main dish. Packed with flavors from sautéed vegetables and a poached egg, it's a nutritious and satisfying meal that can be enjoyed at any time of the day.


Ingredients::

1 cup whole grain cereal
1/2 cup vegetable broth
1/4 cup cherry tomatoes, halved
1/4 cup spinach, fresh
1/4 cup bell pepper, diced
1 egg
Salt and pepper to taste
1 tablespoon olive oil
1 tablespoon grated Parmesan cheese (optional)

Steps::
In a saucepan, heat the olive oil over medium heat.
Add the diced bell pepper and sauté for 2-3 minutes until softened.
Stir in the cherry tomatoes and spinach, cooking for another 2 minutes until the spinach wilts.
In a separate pot, bring the vegetable broth to a gentle simmer.
Add the cereal to the broth and cook according to package instructions (usually about 5 minutes).
While the cereal cooks, poach the egg in boiling water for 3-4 minutes until the white is set but the yolk remains runny.
Once the cereal is cooked, drain any excess broth and season with salt and pepper.
Serve the cereal in a bowl, topped with the sautéed vegetables and the poached egg.
Sprinkle with Parmesan cheese if desired and enjoy!
