Soy Ginger Meatballs Enjoy the rich flavors of Soy Ginger Meatballs. These delicious meatballs are coated in a tangy soy-ginger coating and served with steamed rice and stir-fried vegetables for an easy Asian-inspired meal.


Ingredients:


1 pound ground beef


1/4 cup soy sauce


1 tablespoon minced fresh ginger


2 tablespoons honey or brown sugar


2 cloves minced garlic


1/4 cup minced green onions


1 cup steamed rice


2 cups mixed vegetables (bell peppers, peas, carrots), sautéed


2 tablespoons olive oil


Sesame seeds and additional green onions for garnish (optional)


Directions:


Make the meatballs: In a large bowl, combine the ground beef, minced ginger, garlic and green onions. Form into bite-sized meatballs. Cook the meatballs: Heat olive oil in a large skillet over medium heat. Add the meatballs and cook, stirring occasionally, until browned and cooked through, about 10-12 minutes. Remove from skillet and set aside. Prepare the soy sauce and ginger: In the same skillet, add the soy sauce and honey (or brown sugar). Bring to a simmer and cook until slightly thickened, about 2-3 minutes. Coat the meatballs: Return the meatballs to the skillet and add the soy sauce and ginger until evenly coated. Prepare the vegetables: In a separate skillet, sauté the mixed vegetables with a little olive oil until tender. Serve: Place the soy ginger meatballs over steamed rice. Serve with a side of stir-fried vegetables. Garnish with sesame seeds and additional green onions, if desired
