The fried fillet is considered one of the very well-known and beloved Egyptian food by many Egyptian people and is served on occasions and also on holidays and because it contains many benefits and is considered an expensive food, and today we present it to you with all its details.
Recipe ingredients:
4 pieces of bovine brain
1/2 medium sliced lemon
5 parsley sticks
1 large onion quarters
5 clove hill
1 teaspoon salt
1 piece of bay paper
1/4 cup vinegar
Covering:
1/2 cup flour
2 large eggs
1 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cinnamon
1 cup rusk
For frying:
Corn oil
To serve:
Lemon juice
How to prepare:
1. In a deep saucepan, put a generous amount of water. Add the lemon, parsley, onion, cardamom, salt, bay leaf and vinegar. Place the pot over medium heat to a boil the water vigorously. Add brain pieces. Let the brain pieces cook for 30 minutes.
2. In a deep dish, put a lot of water and ice. Using a perforated spoon, remove the marrow from the saucepan and place it in ice water. Allow the marrow to cool for 5 minutes. Get the marrow out of the water. Get rid of the thin crust that covers the pieces of the brain. The cutting of the brain was allowed to cool completely.
3. Using a sharp knife, cut the brain pieces into slices about 1 centimeter thick.
4. Covering: In a large plate, put the flour. In a high-rim dish, place eggs, salt, pepper and cinnamon. Using a fork to my heart eggs in harmony. In another large plate, put the rusk.
5. Place a slice of the brain in the flour and stir until it is completely covered. Place the slice in the egg, turn it over until completely covered, then place it in the rusk. Stir the slice of the brain into the rusk, pressing lightly to cover it with a generous layer of rusk. Complete covering the rest of the brain slices in the same way.
6. In a deep frying pan, put an amount of oil, about 1 inch high.
7. Put several slices of the brain in the oil. Wait until the bottom is golden, then turn on the other side. Transfer the fried brain slices onto a piece of kitchen paper to get rid of the excess oil. In a large serving dish place the fried brain pieces, sprinkle the lemon juice and serve hot.
