Chicken Kabsa the original way
Ingredients:
- Chicken cut into 4 pieces
- 3 cups of washed and soaked basmati rice in boiling water
- Half a cup of raisins
- 2 onions, chopped
- 2 tablespoons of tomato paste
- 2 crushed tomatoes
- 1 tablespoon of oil
- 1 tablespoon of ghee
- 1 teaspoon of Kabsa spices
- One dried black lemon
- Half a tablespoon of ground coriander
- A pinch of cumin
- A teaspoon of turmeric
- 4 cardamom pods
- A pinch of ground cloves
- 2 bay leaves
- 2 cinnamon sticks
- Salt and black pepper to taste
Method:
▪ In a pot on the stove, melt the ghee, then add the onions and stir until wilted.
▪ Add the chicken and sauté with the onions until golden.
▪Add tomato paste, crushed tomatoes, various spices, with half a spoon of turmeric, and continue stirring for a few minutes.
▪Add salt to taste, and two cups of water to the previous mixture, and reduce the heat and leave the chicken until cooked.
▪Preheat the oven to 200°.
▪Bring a small pot and put the oil in it, then add half a spoon of turmeric, stirring for a few minutes, then turn off the heat.
▪Drain the chicken from the broth and place it in a tray, then brush it with a brush
