Creamy Chicken Stroganoff
Ingredients:
1 lb chicken breast, sliced
8 oz egg noodles
1 tbsp olive oil
1 onion, chopped
2 cloves garlic, chopped
1 cup mushrooms, sliced
1 cup chicken broth
1 cup sour cream
1 tbsp Dijon mustard
Salt and pepper (to taste)
Fresh parsley (for garnish)
Directions:
1️⃣ Cook egg noodles according to package directions, drain and set aside.
2️⃣ Heat olive oil in skillet, cook chicken until browned and cooked through, set aside.
3️⃣ In same skillet, sauté onion, garlic and mushrooms until soft.
4️⃣ Add chicken broth, sour cream and Dijon mustard, stirring until sauce is creamy.
5️⃣ Return cooked chicken to skillet, let stand 5 minutes.
6️⃣ Toss the pasta, mix well and garnish with fresh parsley before serving.
Notes:
For extra flavor, add a splash of lemon juice or white wine (optional).
Serve with a side of garlic bread!
