Cauliflower

Boiled chickpeas

Grill seasoning:

Salt, pepper

Garlic, onion powder

Paprika

Cumin

Olive oil

And according to taste, we can add grated Parmesan cheese

Or a spoonful of pomegranate molasses or balsamic vinegar or a spoonful of honey or just use spices


Vegetable additions, optional, according to taste, or we can make the mix we like or just cauliflower and chickpeas are enough

Sweet red pepper

Onion slices

Sweet potato cubes

Lettuce

Arugula

Baby spinach or kale

Avocado


For garnish, fresh parsley or mint


Sauce:

Tahini

Yogurt

Lemon juice

Salt, pepper

Cumin

Fresh garlic or Powder

olive oil

If we don't like tahini sauce, we can replace it with ranch sauce


- We cut the cauliflower into small florets, or we take the whole cauliflower and cut it into thin slices. This is the best so that it is cooked well, and it is possible for someone who wants to boil the cauliflower for 3 minutes in hot water and drain it well from the water (but I personally just boil it a little at a time, not boil it).


- We mix the seasoning ingredients and spread them on the cauliflower and chickpeas. If we add red pepper, onions, or potatoes, we spread them with the same seasoning and put them in the hot oven at 180 or in the air fryer, and turn them every now and then so that they get color on all sides.


- Mix the sauce ingredients and adjust the taste


- In the serving dish, we put first the arugula and lettuce, if we add them, and on them the grilled vegetables, and on them any other toppings, feta cheese, for example, and finally we put the sauce, mint, or parsley, and possibly green onions, and serve......
