Ingredients:


Mousse Layers:


2 cups heavy cream 🥄

2 cups confectioners' sugar 🍬

1 teaspoon vanilla extract 🍦

12 oz whipped cream cheese (or 8 oz regular cream cheese) 🧀

Pomegranate Jello Mix:


4 oz strawberry Jello powder 🍓

3/4 cup boiling water 💧

3/4 cup cold pomegranate juice 🍷

1 cup pomegranate seeds 🍈

Best Jello Layer:


6 oz strawberry Jello powder 🍓

1 cup boiling water 💧

1 cup cold pomegranate juice 🍷

Extra pomegranate seeds, for garnish 🍈

Instructions:


1. Prepare the glasses: 1️⃣ Arrange 9 glass or plastic cups on a baking sheet Flat.


2. Make the middle Jello layer: 2️⃣ Combine 4 ounces of strawberry Jello powder with 3/4 cup boiling water and stir until gelatin is completely dissolved. Add 3/4 cup cold pomegranate juice and stir well. Refrigerate until Jello is halfway set (it should be wobbly), stirring every 5 minutes to check consistency. Remove and let stand at room temperature.


3. Make the cream mixture: 3️⃣ In the bowl of a stand mixer, beat together heavy cream, confectioners’ sugar, and vanilla extract on high speed until soft peaks form. Gradually add whipped cream cheese. If using regular cream cheese, beat until light and fluffy before adding to batter.


4. Assemble the first layer: 4️⃣ Divide the cream mixture in half. Place one half in a large pastry bag and pipe equal amounts into each cup, spreading to form an even layer.


5. Prepare the Jell-O Cream Mixture: 5️⃣ In the remaining cream mixture, beat in the prepared Jell-O until well combined. Stir in 1 cup of pomegranate seeds with a spoon.


6. Assemble the mousse layers: 6️⃣ Spoon or pipe the Jell-O cream mixture over the top of the first layer in each glass. Refrigerate for 1 hour to set.


7. Prepare the Jell-O topping: 7️⃣ Combine 6 ounces of strawberry Jell-O with 1 cup of boiling water and 1 cup of cold pomegranate juice. Allow Jell-O to cool completely at room temperature.


8. Final assembly: 8️⃣ Pour the cooled Jell-O over the mousse layer to form the final layer. Return to the refrigerator and let the parfaits set completely, at least a few hours or preferably overnight.


9. Decorate and serve: 9️⃣ Garnish with additional pomegranate seeds if desired before serving.
